Ingredients for North Indian Vegetable Kurma Recipe
Vegetables:-
Potatoes, Carrots, Peas, Cauliflower(all diced) - 2 large cups
Onion(big) - 1 no
(sliced lenghthwise)
Garlic pods - 5 - 6 nos
(sliced lengthwise)
Cloves(Grambu) - 2 nos
Cardamom(Elakka) - 2 nos
Cinnamon(Karuagapatta)- 2 nos
Oil - 1 tbsp
Thick and creamy coconut milk - 1/2 cup
Salt - As reqd

For grinding:-
Coconut(grated) - 1/2 cup
Ginger - An inch piece
Garlic pods - 2 nos
Green chillies - 3 - 4 nos
Coriander powder - 1 tsp
Cashew nuts - A few

Preparation Method of North Indian Vegetable Kurma Recipe
1)Cook vegetables till half done, one by one in just enough salted water according to their respective cooking timings.

2)Grind the listed ingredients to a smooth paste.

3)Heat oil in the utensil intended to make the curry.

4)Throw in the spices.

5)Sauté sliced onions till translucent.

6)Transfer the ground paste along with enough water.

7)Bring to boil and simmer for a few minutes.

8)Transfer the cooked vegetables together to the simmering curry and let it simmer again for a few minutes.

9)Add the bay leaves and salt.

10)Remove from fire when the kurma reaches the semi thick consistency.

11)Blend in coconut milk gently.

12)Garnish with finely chopped cilantro.

:- Serve hot with Parathas.
