Ingredients for Citrus Orange Cake Recipe
Oranges (medium size) - 2 nos
Almonds - 1 1/2 cups
Castor sugar - 1 cup
Egg - 6 nos
Baking powder - 1 tsp
Vanilla essence - 1 tsp

To make Lime syrup -
Castor sugar - 1/2 cup
Lime juice - 1/4 cup
Water - 1/4 cup

Preparation Method of Citrus Orange Cake Recipe
1)Preheat the oven to 170C and grease a 8 inch spring form cake tin.

2)Place whole oranges in a medium pan and add enough hot water to cover it and bring to boil.
:- Simmer till soft - (This takes about two hours).

3)In the meantime, powder almond in a processor.

4)Beat eggs and sugar till light and fluffy.

5)Remove the oranges, remove the seeds and white pith. Cut into smaller sections and (along with the rind) pulse it in a blender till smooth.

6)Add the ground almond, pulsed orange mix, baking powder and vanilla essence to the egg mixture and combine well.

7)Bake at 170c for 1 hour.Stand in pan for 30 minutes and then turn it on wire rack .

8)Pierce holes on top of the cake and pour over the lime syrup.

To make Lime Syrup : In a small pan, combine all the ingredients, stir over heat without boiling until sugar is dissolved. Simmer without stirring for 5 minutes until thickened.
