    Kerala Idlis are a traditional favorite throughout the whole of South India that blends well with a dish of hot spicy sambar and coconut chutney. Idli generally consumed as a breakfast dish, Kerala Style Idlis also termed ‘Savory Cakes’ are very nutritious too.

    Usually three parts of raw rice and one part of urad dal is soaked separately for six hours or even left overnight. Fenugreek seeds are added for increased flavor of idlis. Adding some cooked rice to raw rice while grinding, leads to increased fluffiness of Idlis. Soaked rice and lentils are ground separately to a fine batter and combined well. The Idli batter is kept aside for fermentation for required hours. The fermented rice batter is finally poured into idli molds and steamed for required minutes until Idlis are soft and spongy.

    The fermenting process of Idli batter aids in breaking down of starches and hence Kerala Style Idlis are very easily metabolized in body leading to easy digestion. You can explore a well detailed as well as simple Kerala Style Idli recipe here
