Instructions
- Roast the brinjal on a medium flame till well cooked. When the skin has charred completely, peel and mash well.
- Heat the oil in a pan.
- Add onion and saute till it turns light brown.
- Add minced garlic, ginger, green chillies and saute well.
- Add chopped tomatoes and saute well.
- Add mashed brinjal and saute for 2 - 3 minutes.
- Remove into an airtight container and keep the burning coal on the top of the brinjal.
- Close the container tightly and don’t allow the smoke to go outside of the container.
- After 5 minutes open the container. Remove the cloves and coal. Mix well.
- :- Serve with chapati or rice.
