Instructions
For preparing
beef
with thai brinjals, heat
oil
in a vessel.
Add the green curry paste and fry until there is a nice smell.
Stir in half the
coconut
milk
little by little. Cook over low flame for 5 minutes, until the
oil
begins to separate.
Then add
beef
, lime leaves, fish sauce,
sugar
and brinjals. Cook and then stir in the remaining
coconut
milk
.
Allow it to a simmer and cook until the
beef
and brinjals are done. Remove it from the flame.
Garnish with
basil leaves
.
Beef
with thai brinjals are ready. Serve hot with noodles.
