  • Boneless beef(chopped) – 450g
  • Green curry paste – 3tbsp
  • Coconut milk 2 1/2cups
  • Lime leaves – 4nos
  • Fish sauce – 2cups
  • Brown sugar 1tsp
  • Thai brinjals(halved) – 150g
  • basil leaves 2springs
  • Oil(As reqd) –
  1. For preparing beef with thai brinjals, heat oil in a vessel.
  2. Add the green curry paste and fry until there is a nice smell.
  3. Stir in half the coconut milk little by little. Cook over low flame for 5 minutes, until the oil begins to separate.
  4. Then add beef, lime leaves, fish sauce, sugar and brinjals. Cook and then stir in the remaining coconut milk.
  5. Allow it to a simmer and cook until the beef and brinjals are done. Remove it from the flame.
  6. Garnish with basil leaves.
  7. Beef with thai brinjals are ready. Serve hot with noodles.
