- Eggs - 4 nos
- Capsicum(finely sliced) - 1/2 cup
- Potato(finely sliced in rings) - 1 no
- Onion(finely cubed) - 1 no
- Green chillies(finely chopped) - 2 nos
- Pepper powder - 1/2 tsp
- Oil(As reqd) -
- Salt(As reqd) -

Instructions
- For preparing capsicum-potato omelet, in a bowl, beat in eggs, onion, green chillies, salt and pepper powder.
- Toss in the sliced capsicum and mix gently.
- Keep it aside for 1/2 an hour to allow the flavors to infuse in properly.
- Drizzle a little oil around the sides of the omelet and fry it on both the sides on low flame till done.
