  1. For preparing carrot masala, heat coconut oil in a vessel.
  2. Saute onions, ginger-garlic paste, green chillies and fennel seeds.
  3. Add turmeric powder, garam masala, curry leaves, coriander powder, salt and tomato. Saute well until the oil separates.
  4. Add in the carrots with required water. Allow it to cook on low flame till done.
  5. Garnish with lime juice.
  6. Carrot masala fry is ready. Serve hot.
