Carrot as we all know is rich in Vitamin A and is a powerful cleansing food. It is good for the eyes and the skin.One of the easiest and quickest side dish you can whip up for plain rasam rice or curd rice or anything.
Instructions
- peel the skin and grate the carrot
- heat the oil in the pan and temper the mustard, broken urad dal, curry leaves and red chilies
- add grated carrot and mix well
- add salt and turmeric powder and mix well
- after 5 minutes add grated coconut and mix well
- Allow to cook for 2 minutes in a low flame and turn off the flame
- carrot poriyal is ready to serve
