  • Basmathi rice(cooked) – 1cup
  • Boneless Chicken(cooked and shredded) – 2cups
  • Carrots(grated) – 1cup
  • Onion(finely chopped, big) – 1no
  • Green chilies(slit) – 2nos
  • Green peas(cooked) – 1/2cup
  • Split Bengal gram(Uzhunnu parippu) – 1tsp
  • Cashew nuts – 2tbsp
  • Mustard seeds 1/2tsp
  • Turmeric powder 1/2tsp
  • Chilly powder – 1tsp
  • Pepper powder(A pinch) –
  • Lemon juice – 5tbsp
  • Curry leaves 2springs
  • Coriander leaves(finely chopped) – 5springs
  • Oil(As reqd) –
  • Salt(As reqd) –
  1. For preparing chicken carrot rice, heat oil in a pan and splutter mustard seeds.
  2. Toss in the split bengal gram and cashew nuts. Saute till it becomes brown.
  3. Add in the curry leaves, onions and green chillies. Fry it till the onions become golden brown in colour.
  4. Then add turmeric, salt and chilly powder. Saute for a minute.
  5. Stir in the grated carrot and pepper powder. Sprinkle a little water.
  6. Allow the carrot to cook on low flame with a closed lid.
  7. Add in the cooked green peas, shredded chicken and rice.
  8. Pour in the lemon juice and mix well.
  9. Garnish with coriander leaves.
  10. Chicken carrot rice is ready. Serve hot.
