For the Cake Batter:
  • Apple(finely cubed) - 1 no
  • Rum - 3 tbsp
  • All purpose flour(Maida) - 1 1/2 cup
  • Cocoa Powder - 3 tbsp
  • Baking soda - 2 tsp
  • Coffee powder - 2 tsp
  • Yogurt - 1 cup
  • Sugar - 1 cup
  • Walnuts(chopped) - 1 cup
  • Dates(de-seeded and chopped) - 1 cup
  • Oil - 2 tbsp
For the Bottom lining:
  • Brown sugar - 3 tbsp
  • Raisins - 4 tbsp
  • Apples(peeled and finely sliced) - 2 nos
  • Lemon juice - 3 tbsp

Instructions
  1. Cake batter: 1)For preparing christmas eggless apple rum cake, first preheat the oven at 180 degrees celcius.
  2. Take a bowl, sprinkle rum on top of the apple and keep it aside.
  3. Sift together maida, cocoa, baking soda and coffee powder. Keep it aside.
  4. In another bowl beat the yogurt and sugar until it dissolves.
  5. Add in the sifted maida mixture slowly beating it continuously.
  6. Toss in the apples, walnuts and dates.
  7. Pour in the oil and blend well. Keep it aside.
  8. Bottom lining: 7)Line the baking tin with greased foil paper.
  9. On top of the foil paper, scatter brown sugar and raisins.
  10. Place the apples in rows over the sugar and raisins.
  11. Sprinkle lemon juice over it.
  12. Spoon the cake batter over the apples and spread it evenly.
  13. Bake for 50 minutes till done. Pierce the cake with a toothpick to check if it is cooked.
  14. Remove the cake from the oven and allow it to cool.(Do not remove the foil till the cake has cooled completely)
  15. Once it has cooled completely, remove the foil and cut it.
  16. Christmas eggless apple rum cake is ready.
