  • 400 g Boneless duck cooked and shredded
  • 1.6 litres Chicken stock
  • 3 cloves Garlic finely chopped
  • 2 nos Dried chipotle chillies finely sliced
  • 1 no Avocado
  • 2 tbsp Lime juice
  • 5 nos Spring onions finely sliced
  • 2 tbsp Coriander leaves chopped
  • Salt As reqd


  • For preparing duck and avocado soup, boil the stock in a large vessel with garlic and chipotle chillies.
  • Meanwhile, cut the avocado in half around the stone. Twist apart and then remove the stone with a knife. Carefully peel off the skin, dice the flesh and immediately toss in lime juice to prevent discoloration.
  • Arrange the spring onions, duck, avocado and coriander leaves in the bottom of a large serving bowl.
  • Ladle the hot stock over it .
  • Duck and avocado soup is ready. Serve hot with tortilla chips.
