Ingredients
- Basmati rice - 1 cup
- Onion(finely sliced) - 1 no
- Tomatoes(blended) - 2 cups
- Chilly powder - 1/2 tsp
- Turmeric powder - 1/2 tsp
- Mustard seeds - 1/2 tsp
- Curry leaves - 1 spring
- Coriander leaves(chopped) - 2 springs
- Cloves - 4 nos
- Cinnamon(broken, Karugapatta) - 1 inch
- Cashew nuts - 4 tbsp
- Raisins - 4 tbsp
- Water - 1 cup
- Ghee(As reqd) -
- Salt(As reqd) -

Instructions
- In the same ghee splutter mustard seeds.
- Toss in the cloves and cinnamon. Saute it for 1 minute on low flame.
- Saute in the onions till it becomes transparent.
- Sprinkle in turmeric powder, chilly powder and salt.
- Pour in the tomato paste and sautT it for 2 minutes.
- Then pour in the water and allow it to boil.
- Once the water boils toss in the basmati rice and allow it to cook on low flame till done.
- Lastly, garnish with coriander leaves, fried cashew nuts and raisins.
- Easy tomato rice is ready. Serve hot with chicken curry.
