Eggplant(
Brinjal
/Vazhuthananga) –

Grated
Coconut

For seasoning: –
Oil

Instructions
Grill or roast eggplant on a gas stove. Remove the skin. If these are not available, then pressure cook the eggplant without adding
water
. Then take it on a plate and mash with a ladle. Keep aside.
Heat
oil
in a pan.
Add all the seasoning ingredients one by one. When it splutters, pour it over the mashed eggplant.
Sprinkle
salt
and
sugar
.
Add grated
coconut
and chopped
onion
.
Mix well.
