  1. Grill or roast eggplant on a gas stove. Remove the skin. If these are not available, then pressure cook the eggplant without adding water. Then take it on a plate and mash with a ladle. Keep aside.
  2. Heat oil in a pan.
  3. Add all the seasoning ingredients one by one. When it splutters, pour it over the mashed eggplant.
  4. Sprinkle salt and sugar.
  5. Add grated coconut and chopped onion.
  6. Mix well.
