  • Rice – 2cups
  • Butter – 6tbsp
  • Cinnamon(Karugapatta) – 2sticks
  • Cloves(Grambu) – 4nos
  • Cardamom(Elakka) – 3
  • Salt(As reqd) –
  • Water 4cups
  • Onions(large) – 2nos
  • Ginger 1piece
  • Garlic cloves 4nos
  • Carrot(chopped) – 100gm
  • Beans(chopped) – 100gm
  • Cabbage(finely chopped) – 100gm
  • Capsicum(chopped) – 1no
  • Celery(chopped) –
  • Pepper – 1tsp
  • Soya Sauce –
  • Chilly sauce –
For garnishing:
  1. For prepaaring Kerala Easy Fried Rice, first heat 4 tbsp of butter in a pan.
  2. Add cinnamon and cloves.
  3. Add the well cleaned rice and fry it.
  4. Add 4 cups of water along with salt and cook it well.
  5. Heat 2 tsp of butter in another pan.
  6. Add chopped onions and stir it.
  7. When it becomes brown, mix the ginger and garlic paste and stir, till it`s aroma emits.
  8. Add chopped carrots, beans and cabbage.
  9. Add required salt and pepper.
  10. :- Vegetables should be half cooked.
  11. Add capsicum and celery.
  12. Mix cooked rice and stir it well on a low flame.
  13. Mix well with soya sauce and chilly sauce.
  14. Garnish with fried onions, cashew nuts and raisins.
  15. :- Serve Kerala Easy Fried Rice hot.
  16. :- Boneless cooked and minced meat(100 gm) and two scrambled eggs can make the dish non-vegetarian.
