Malabar Style egg bonda

Ingredients
- Boiled Eggs - 5 nos
- Onion(big) - 3 nos
- Green chillies - 7 nos
- Ginger - 1" piece
- Pepper powder - 1/2 tsp
- Salt(As reqd) -
- Oil for frying -
- Allpurpose flour(Maida) - 1/2 cup
- Curry leaves/Coriander leaves(optional) -

Instructions
- Cut the boiled eggs into 2 equal parts.
- Seperate out the yellow mass and keep aside.
- Make a paste of green chillies and ginger.
- Heat oil in a heavy pan.
- Add chopped onions and salt.
- When the onions turn brown, add ginger-chilly paste.
- Add the yellow mass and pepper powder to this and mix well.
- Cook for 2 min on a low flame.
- Add coriander leaves or curry leaves.
- Dip the egg bondas into the maida mix.
- Heat oil in a pan.
- Put the egg bondas and deep fry them.

Simple and nice but I feel 1 cup maida is too much for this recipe.
