Kerala Style Chicken Stew
Kerala Style Chicken Stew is a delicious meal with chicken, potatoes , onions and green chillies for spice. It’s all simmered in a rich seasoned chicken broth until tender. It is a very mild yet full of flavors Chicken curry which is cooked in coconut milk with minimum spices and is a traditional recipe from the state of Kerala in India. This is usually served along with Rice, Hooper or Appam and it tastes absolutely delicious. This Kerala Style Chicken Stew is cooked in coconut oil which gives it a very different flavor.If you want to give it that traditional and authentic taste, do use only coconut oil. We have used Potatoes along with chicken, but you can also use green beans, carrots, cauliflower, and green peas. The curry has got a strong flavors of cinnamon, cardamom and peppercorns that are used as a whole in this dish. Then the addition of vegetables along chicken gives it a different texture as well. Kerala being famous for its usage of coconut, rightly depicts the way they cook in this recipe.   1. Wash the chicken pieces and cut them to small pieces.
  2. Heat a pressure cooker add coconut oil, when oil is hot, add bay leaves, pepper corns, cardamom, cloves, and cinnamon stick.
  3. When it splutters, add ginger and garlic, sauté for few seconds.
  4. Add onion, green chilies, curry leaves and salt , sauté nicely.
  5. When onion turns soft and transparent add chicken and potato, mix well.
  6. Add pepper powder and garam masala , sauté for 2-3 minutes.
  7. Add semi thin coconut milk and salt , mix well..
  8. When stew is starts to boil, cover the pressure cooker for 2 whistle on medium flame.
  9. Switch off the heat and allow the pressure to release naturally.
  10. When the pressure is fully released, open the cover and heat on .
  11. Chicken stew is cooked completely, using a ladle mash a few potato pieces so that the gravy becomes thicker.
  12. Now add one cup of thick coconut milk and stir well.
  13. When stew is about to boil , turn off the heat.
  14. Lastly drizzle a tsp of coconut oil and garnish with coriander leaves and curry leaves.
