  1. For preparing lady fish noodle soup, take a vessel and boil water with lady fish, lemon grass and fish sauce. Allow the fish to cook and allow it to cool.
  2. Remove all the bones and shred it. Strain and keep the stock aside.
  3. Blend ginger, lemon juice, onions, garlic and red chillies to a smooth paste.
  4. Heat ground nut oil in a vessel and saute the paste until a nice smell comes.
  5. Add the fish pieces, mix well and remove it from the flame.
  6. In another vessel, mix in fish stock, coconut milk, rice flour, pepper powder, salt, a little water, bamboo shoots and gram flour. Allow the mixture to boil stirring it continuously to avoid lumps. Let the bamboo shoots become tender.
  7. Then add in the lady fish mixture and noodles. Allow it to boil and remove it from the flame.
  8. Lady fish noodle soup is ready. Serve hot.
