Lemon Pickle : Elumichai Oorukai
Lemon Pickle is the most favourite pickle in South India. This spicy and little tangy pickle is prepared especillay during summer seasons. This goes well with rice and even with idly, dosa etc.

  • Lemon : 12 nos ( Ripe & Fresh ) –
  • Green chillies : 6( with or without stalks, washed) – 10nos
  • Fresh ginger ( peeled & washed ) : 2” to 3” piece –
  • Salt to taste –
  1. Wash lemons, dab dry and cut them into 4 to 8 pieces.
  2. Cut green chillies into ½” to 1” long pieces and cut ginger into discs of suitable thickness or into small pieces.
  3. Boil salt in a cup of water till the water reduces to half.
  4. Strain, allow it to cool and add to the cut ingredients.
  5. Mix them all thoroughly and store in a clean, dry airtight preferably a glass bottle.
  6. Shake the bottle every day.
  7. It takes about 4 days to be ready for use.
