Malabar Special Chicken Fry | Kozhi Pozhichathu
Malabar Chicken Fry is a non-vegetarian tasty dish which is delectable blend of aromatic spices and herbs, very popular in Malabar region. Here is how you can make this Malabar Kozhi Porichathu recipe at home using some easily available ingredients in your kitchen. Using nadan chicken to make this Malabar Chicken Fry will enhance the taste and flavor of the dish. Corn flour is used to tenderize the chicken and is also preferred as a binding for the masala. Ingredients
  • Chicken – 500g
  • Chilly powder – 2Tsp
  • Turmeric powder 1/4Tsp
  • Corn flour – 2Tbsp
  • Lemon juice – 1Tsp
  • Garam masala 1/2Tsp
  • Green chilly – 7No.
  • Chopped ginger 1Tbp
  • Chopped garlic 1Tbsp
  • Salt(As required) –
  • Oil(For frying) –
  • Curry leaves(In a good amount for garnishing) –
Instructions
  1. For preparing the dish, first clean chicken and cut into small pieces.
  2. Marinate chicken pieces with a mixture of salt, lemon juice, corn flour, garam masala, red chilly powder and turmeric powder. Keep it aside for 30 minutes.
  3. Heat oil in a pan and fry the chicken pieces to a brown colour. Once the chicken is done remove from oil and keep aside.
  4. Heat 2 tbsp oil in a pan and add chopped ginger and garlic. Saute for 2 minutes.
  5. Then add green chillies and curry leaves, saute for few seconds.
  6. Finally add fried chicken and mix well. Remove it from flame.
  7. Serve Malabar Chicken Fry hot.
