Masala Peanut Fry is a very famous snack in South India. This masala kappalandi fry is a very tasty, crunchy, crispy snack. This masala kappalandi fry is fried in oil but it absorbs very less oil. Tasty masala peanut fry taste depends upon the good quality of the peanut you choose. Peanuts are an especially good source of healthful fats, protein, and fiber. peanuts are nutrient-rich and low in carbohydrates. Masala Kappalandi Fry is kids favorite snack, we can pack to their snack box. We can roast the peanut either in a microwave or normal pan and we mix with flour and spices powder with little water and fry in hot oil. Now we can see a detail procedure of masala peanut fry.
Place peanuts in a microwave safe flat dish & microwave on high power for 1 minute.
Open the microwave oven and mix the peanuts well and return to microwave on high for another 1/2 a minute.
Remove the peanuts from the microwave and keep aside for cooling.
Meanwhile, take a bowl and put gramflour, rice flour, chilly powder, asafoetida, salt & garlic paste and mix well. Don`t add water.
Take the cooled peanuts. Sprinkle a few drops of water on them and mix with hand so the water coats the peanuts.
To this moist peanuts, add half of the gram flour mix, and mix well. Sprinkle a little more water and add the rest of the flour little by little.
All the peanuts should be coated well with moist flour mix. Don’t add lot of water . Otherwise the peanuts will stick together when frying.
Take a heavy bottomed pan and heat oil for deep frying.
When the oil is hot, reduce the flame and drop the peanuts in along with the torn curry leaves. Deep fry until golden brown stirring continuously. Drain on tissue paper. Tasty evening snack is ready.
