Mediterranean Watermelon Salad
This fresh healthy salad is great on a summer day. The cool and crisp mediterranean flavors, along with watermelon, will help to cool you down and re-energize your body. This is the best treat for this summer.

  • watermelon cubes – 1bowl
  • Yellow Bell Pepper – 1
  • medium size onions – 2
  • Cucumber 1
  • Tomato 1
  • pomegranate juice – 1
  • Mustard – 1tbsp
  • olive oil 2-3tbsp
  • Cumin/Jeera powder – ½tsp
  • Oregano ¼tsp
  • Green olives – 10-12nos
  • ice lettuce 1bowl
  • flaxseed powder – 1tsp
  • Pistachios (optional) –
  • Freshly chopped coriander leaves –
  • Salt, pepper –
  1. To make Mediterranean Watermelon Salad, cube the watermelon, onions, tomato, and cucumber.
  2. Tear the ice lettuce into 1” squares.
  3. Cut the onion into quarters and separate each layer.
  4. Soak in a bowl of water for 15- 20 minutes and then drain off the water before adding to the salad.
  5. Mix the cut vegetables, ice lettuce, olives and chopped coriander leaves in a bowl and toss well.
  6. To make the dressing: Pour pomegranate juice in a bowl.
  7. Add mustard paste, oregano, jeera powder, flax seed powder, salt & pepper and whisk till all the ingredients are well blended. Add olive oil and mix well.
  8. Pour the Mediterranean Watermelon Salad dressing into a bottle and refrigerate.
  9. Add the dressing to the salad ingredients just before serving.
  10. Serve Mediterranean Watermelon Salad chilled.
