Ingredients
- Potatoes(peeled and chopped) - 2 nos
- Carrot(peeled and chopped) - 1 no
- Beans(chopped) - 1/2 cup
- Beetroot(peeled and chopped) - 1/2 cup
- Ginger(finely chopped) - 1 inch
- Onion(finely chopped) - 1 no
- Green chillies(finely chopped) - 2 nos
- Curry leaves(finely chopped) - 2 springs
- Coriander leaves(finely chopped) - 3 springs
- Chilly powder - 1/2 tsp
- Pepper powder - 1/2 tsp
- Bread crumbs(As reqd) -
- Vinegar - 1/2 tbsp
- Egg(beaten with a pinch of salt) - 1 no
- Salt(As reqd) -

Instructions
- Drain the water well and smash all the veggies with a fork.
- Add in chilly powder, pepper powder, ginger, green chillies, onions, curry leaves and coriander leaves. Mix it well.
- If it is watery, put some bread crumbs and mix it.
- Make cutlets with the mixture.
- Dip it in bread crumbs and then in egg.
- Heat oil in a frying pan and fry the cutlets till it becomes brown.
- Mixed veggie cutlets are ready. Serve hot with ketchup for snacks.
