  • For preparing mouth watering duck curry, pound the ginger, dried red chillies, lemon grass and galangal into a coarse paste.
  • Then add the shrimp paste and brown sugar. Keep this curry paste aside.
  • Toss in the duck into a vessel.
  • Add the curry paste and stir well.
  • Cook the duck over a low flame, stirring occasionally, until the duck has changed colour.
  • Then add water, turmeric powder and soy sauce into the duck. Allow it to simmer gently till the duck is tender.
  • Add the shallots, garlic, tamarind juice, sugar and fish sauce.
  • Garnish with red chillies.
  • Mouth watering duck curry is ready. Serve hot.
