  • Chicken(cleaned and cubed) – 300g
  • Potatoes(chopped) – 115g
  • Mushrooms(chopped) – 225g
  • Coconut milk 2 1/2cups
  • Red curry paste – 1tbsp
  • Fish sauce – 3tbsp
  • Palm sugar 2tsp
  • Lime leaves(torn) – 4nos
  • Red chillies(slit) – 2nos
  • Coriander leaves(chopped) – 2springs
  • Salt(As reqd) –
  1. For preparing potato with mushroom and chicken, pour 1 1/2 cups of the coconut milk in a vessel. Cook until an oily sheen appears on top.
  2. Add the red curry paste, fish sauce and palm sugar to the coconut milk. Mix well.
  3. Toss in the mushrooms. Mix well and cook over a medium heat for about 1 minute.
  4. Pour in the remaining coconut milk and allow it to boil.
  5. Add the potato and chicken and allow to cook.
  6. Stir in the lime leaves and red chillies.
  7. Garnish with coriander leaves.
  8. Potato with mushroom and chicken is ready.
