- Potatoes(big) - 2 nos
- Mustard seeds - 1/2 tsp
- Spring onions(finely chopped) -
- Mushrooms(chopped) - 115 g
- Tomatoes(chopped) - 400 g
- garlic( crushed) - 2 cloves
- Red chllies(finely chopped) - 2 nos
- Chilly powder - 1/4 tsp
- Coriander powder - 1 tsp
- Cumin seeds - 1 tsp
- Turmeric powder - 1/2 tsp
- Coriander leaves(finely chopped) - 2 springs
- Oil - 3 tbsp
- Salt(As reqd) -

Instructions
- For preparing potato with mushrooms, preheat the oven to 200 C(400 F).
- Brush the potatoes with 1 tbsp of oil and prick it with a fork. Bake for 30-35 minutes until soft.
- Heat the remaining oil in a pan and splutter mustard seeds.
- Add the onions, mushrooms, garlic and red chillies. Saute for 5 minutes.
- Then add in chilly powder, cumin seeds, coriander powder, turmeric powder and salt. Saute for 3 minutes.
- Toss in the tomatoes and allow it to simmer for 5 minutes.
- Cut the potatoes in half lengthwise and scoop out the soft flesh into a large mixing bowl. Mash the flesh to a course texture using a fork.
- Add the mashed potatoes to the pan with the coriander leaves. Allow it to simmer for 5 minutes until it thickens.
- Potatoes with mushrooms is ready. Serve hot.
