  • Potatoes(big) – 2nos
  • Mustard seeds 1/2tsp
  • Spring onions(finely chopped) –
  • Mushrooms(chopped) – 115g
  • Tomatoes(chopped) – 400g
  • garlic( crushed) – 2cloves
  • Red chllies(finely chopped) – 2nos
  • Chilly powder – 1/4tsp
  • Coriander powder 1tsp
  • Cumin seeds 1tsp
  • Turmeric powder 1/2tsp
  • Coriander leaves(finely chopped) – 2springs
  • Oil 3tbsp
  • Salt(As reqd) –
  1. For preparing potato with mushrooms, preheat the oven to 200 C(400 F).
  2. Brush the potatoes with 1 tbsp of oil and prick it with a fork. Bake for 30-35 minutes until soft.
  3. Heat the remaining oil in a pan and splutter mustard seeds.
  4. Add the onions, mushrooms, garlic and red chillies. Saute for 5 minutes.
  5. Then add in chilly powder, cumin seeds, coriander powder, turmeric powder and salt. Saute for 3 minutes.
  6. Toss in the tomatoes and allow it to simmer for 5 minutes.
  7. Cut the potatoes in half lengthwise and scoop out the soft flesh into a large mixing bowl. Mash the flesh to a course texture using a fork.
  8. Add the mashed potatoes to the pan with the coriander leaves. Allow it to simmer for 5 minutes until it thickens.
  9. Potatoes with mushrooms is ready. Serve hot.
