Instructions
  1. For preparing prawn veggie rice, heat oil in a pan and splutter mustard seeds.
  2. Toss in the split bengal gram and cashew nuts. Saute till it becomes brown.
  3. Add in the curry leaves, onions and green chillies. Fry it till the onions become golden brown in colour.
  4. Then add turmeric, salt and chilly powder. Saute for a minute.
  5. Stir in the grated carrot, prawns, capsicum and pepper powder. Sprinkle a little water.
  6. Allow the carrot and prawns to cook on low flame with a closed lid.
  7. Add in the cooked green peas and rice.
  8. Pour in the lemon juice and mix well.
  9. Garnish with coriander leaves.
  10. Prawn veggie rice is ready. Serve hot.
