Puli Inji
Puli Inji is a traditional kerala dish prepared during onam and marriage sadyas. This is a special traditional pickle. This is an inevitable part of kerala sadya. It is made of ginger,chilli, jaggery and tamarind.

  1. Heat coconut oil in a kadai and add chopped ginger,chopped chilly saute for 2 minutes until ginger colour turns brown.
  2. When it turns brown switch off gas.keep it aside.
  3. When it become cool crushed this fried ginger in a mixer.
  4. Add turmeric powder,chilli powder and salt saute for a minute.
  5. Then add tamarind paste to this and saute for 2 minutes.
  6. Add jaggery to this and sautefor a minute.Bring to boil reduce flame cook for 2 minutes until gravy becomes thick.
  7. Heat oil in another kadai add mustards when it splutters add red chilly and curry leaf saute for a minute.
  8. Add this tempering to tamarind mix,add 1/2 cup water and boil for 2 minutes
  9. Now pulinji is ready to serve with rice.
