Salmon is baked, flaked and then mixed with rice

Ingredients
- Salmon fillets(cleaned) - 1/2k g
- Basmati rice - 1 cup
- Eggs(boiled and slit into 4 halves) - 3 nos
- Butter - 1 tsp
- Oil(As reqd) -
- Lemon zest - 1 tbsp
- Onion(finely chopped) - 1 no
- Coriander powder - 1 tsp
- Turmeric powder(A pinch) -
- Cumin powder(Jeerakam) - 1/2 tsp
- Water(As reqd) -
- Lime juice - 1 tbsp
- Coriander leaves(finely chopped) - 6 springs
- Salt(As reqd) -

Instructions
- Heat oil and butter in a pan. Add in onion, salt, coriander powder and turmeric powder. Fry for 1 minute in low flame.
- Meanwhile flake the salmon with a fork .
- Once the rice is cooked add the flaked salmon.
- Garnish with boiled eggs, coriander leaves and lime juice.
- Salmon with rice is ready. Serve hot.
