For Dressing:
Mayonnaise –

Instructions
For preparing seafood with
pineapple
, shell and de-vein the
prawns
, leaving the tail intact.
Break the
salmon
into large pieces.
Drain the
pineapple
, reserve 62ml of syrup for dressing.
Combine
pineapple
syrup, watercress leaves,
prawns
,
salmon
,
pineapple
and capsicums. Take a spoonful of this mixture and place it on to the pre-washed
lettuce
leaves on a serving plate.
Sprinkle
parsley
over it.
Combine mayonnaise,
cream
and
tomato
sauce in a blender and pour it over just before serving.
Seafood with
pineapple
is ready. Serve immediately.
