For preparing sesame chicken salad, in a bowl whisk in soy sauce, sesame paste, hoisin sauce, sugar, chilli sauce, boiling water and rice wine together and mix well till the sugar dissolves. Keep this dressing aside.
Cook the chicken in saltwater, drain it and keep it aside. Keep the drained chicken stock aside. Shred the cooked chicken and remove the bones.
Cook the noodles in boiling water with the remaining chicken stock until it becomes soft. Drain, rinse with cold water and keep it aside.
Put the cooked noodles, shredded chicken, mangetout and celery in a large bowl. Add in the dressing and toss it together.
