- Brinjals(cubed) - 2 nos
- Onions(finely sliced) - 2 nos
- Capsicum(cubed) - 1/2 cup
- garlic(grated) - 2 cloves
- Curry leaves - 1 spring
- Vinegar - 1 tbsp
- Pepper powder(As reqd) -
- Sesame oil(As reqd) -
- Salt(As reqd) -

Instructions
- For preparing special fried brinjals, heat sesame oil in a vessel.
- Saute in the onions till it becomes transparent.
- Toss in the capsicum and saute it for 2 minutes on low.
- Add in the cubed brinjals, garlic, curry leaves, pepper powder, vinegar and salt.
- Allow it to cook with a lid on low flame.
- Special fried brinjals are ready. Serve hot with chapathi.
