Ingredients
- Potatoes(cubed) - 225 g
- Beans(chopped) - 125 g
- Carrots(cubed) - 150 g
- Brinjal(cut lengthwise) - 1 no
- Fresh Coconut milk - 1 cup
- Flaked dried red chillies - 1 tsp
- Cumin seeds(powdered, Jeerakkam podi) - 1 tsp
- Coriander powder - 1/2 tsp
- Turmeric powder - 1 tsp
- Curry leaves - 3 springs
- Water(As reqd) -
- Oil(As reqd) -

Instructions
- Add in the brinjal and allow it to cook.
- In a pan heat the oil, add the curry leaves and the flaked dry chillies.
- Then add in cumin powder, coriander powder and turmeric powder. Saute it for 1 minute on low flame.
- Toss it into the vegetables and mix well.
- Special mixed vegetables curry is ready. Serve hot with chapatti, bread, puloa, etc.
