- Brinjals - 12 nos
- Onion(finely chopped) - 1 no
- Ginger(garlic paste - 1 1/2 tbsp) -
- Coriander powder - 1 tsp
- Cumin seeds - 1 tsp
- White poppy seeds - 2 tsp
- Sesame seeds - 2 tsp
- Coconut(grated) - 2 tsp
- Peanuts(roasted) - 1 tbsp
- Chilly powder - 1 1/2 tsp
- Curry leaves - 6 springs
- Dried red chillies(flaked) - 2 nos
- Tamarind paste - 1/2 tsp
- Oil(As reqd) -
- Salt(As reqd) -

Instructions
- Add the coriander powder and cumin seeds. Saute for some time on low flame.
- Then add the poppy seeds, sesame seeds and grated coconut. Saute for 1 minute. Allow it to cool and then grind the spices with a little water to make a coarse paste.
- Mix the peanuts, chilly powder and salt into the spice paste. Drain the brinjals and pat dry it. Stuff each of the slits with the spice paste.
- Heat oil in a pan. Add the curry leaves and dry red chillies.
- Cover the pan and allow it to simmer on low flame the brinjals become tender.
- Special stuffed brinjals are ready. Serve hot with chapatti.
