  1. Heat oil in a pan or a kadai.
  2. Splutter mustard seeds.
  3. Add cumin seeds, chopped small onions, green chillies and curry leaves.
  4. When the onions turn golden brown, add the mashed potatoes.
  5. Add the second extract or thin coconut milk.
  6. Add a pinch of garam masala powder and salt.
  7. Allow it to boil.
  8. When it starts to boil, add the first extract or the thick coconut milk.
  9. Before it starts to boil, switch off the flame.
  10. Sprinkle some pepper powder and mix well.
  11. :- Serve with vellayappams.
