1)Get a large stockpot and add the vegetable broth,cold water and salt and mix well. Add the rest of the ingredients to this mix and immerse the turkey.Leave the turkey overnight in the mix in the refrigerator.
When ready to cook take the turkey out of the brine water and pat it dry. Put some butter inside the skin and season the turkey with pepper.
2)For preparing stuffed turkey with potatoes, preheat the oven at 220 degrees celsius.
3)Heat 20 grams of butter in a pan, fry the mushrooms, parsley, carrots and bread on medium flame for 2 minutes.
Add salt and pepper. Mix well and allow it to cool. Keep it aside.
Stuff the turkey with the filling. Seal the turkey with a ball of grease proof paper.
Put the turkey in a baking dish and coat it with 20 grams of butter and pepper powder. Bake it in the oven till done.
When the turkey is done, arrange the potatoes around it and add knobs of the remaining butter. Bake it for another 35 minutes.
