  • Ripe melon(deseeded & pureed, Thannimathan) – 450g
  • Lemon juice – 1tbsp
  • Fresh cream(whipped) – 280ml
  • Brown sugar 170g
  • Crystallized ginger(finely chopped) – 50g
  1. For preparing tangy melon ice cream, add the lemon juice & sugar to the puree & leave the mixture to stand for about 2 hrs.
  2. Combine the puree with cream.
  3. Add ginger & mix thoroughly, pour into a freezing container & freeze until firm. Vigorously whisk the partially frozen ice at least once during freezing.
