Duck with tarragon and other ingredients

Ingredients
- Boneless duck(chopped) - 300 g
- Unsalted butter - 55 g
- Onion(chopped, big) - 1 no
- Duck stock - 625 ml
- Pepper powder(As reqd) -
- Tarragon(chopped) - 2 tbsp
- Double cream - 150 ml
- Salt(As reqd) -

Instructions
- Melt the butter in a vessel and fry the onion till it becomes transparent.
- Add the duck to the pan with half of the duck stock. Allow it to cook on low flame. Allow it to cool.
- Blend it to a fine paste.
- Then add the remaining stock and season with salt and pepper.
- Garnish the soup with fresh tarragon.
- Tarragon duck soup is ready. Serve hot with deep-fried croutons.
