Ingredients
  • Plain cooked rice – 4cups
  • Garlic pods(chopped) – 4nos
  • Veg oil 4tbsp
  • Tofu(sliced into strips) – 1cup
  • Onion(sliced) – 1no
  • Sweet potatoes or white potatoes(diced) – 1
  • Mushrooms(sliced) – 1/4lb
  • Tomatoes(chopped) – 1
  • Brown sugar 1tsp
  • Light soy sauce – 3tbsp
  • Curry powder – 1/4tsp
  • Turmeric powder 1/2tbsp
  • Pepper – 1/4tsp
  • Green onions(sliced) – 2
  • Thai basil(snipped) – 2
Instructions
  1. Heat oil in a pan.
  2. Fry the garlic in it until browned.
  3. Add tofu and onions and fry 2-3 minutes.
  4. Add the rice, mushrooms, potatoes, tomatoes, brown sugar and soy sauce and fry another 2-3 minutes.
  5. Add the curry powder, turmeric, and pepper. Mix well.
  6. Cut the green onions into pieces and sprinkle over the top, along with the snipped basil.
