  1. For preparing thick brinjal coconut gravy, marinate the brinjals in salt.
  2. Heat olive oil in a pan and fry the brinjals.
  3. Grind grated coconut, chironji nuts, poppy seeds and sesame seeds to a thick paste. Keep this masala aside.
  4. Heat olive oil in a pan and splutter the mustard seeds.
  5. Add cumin powder, coriander powder, curry leaves, ginger paste, garlic paste and turmeric powder. Allow it to cook for 2 minutes.
  6. Then add the fried brinjals, ground masala, chilly powder and groundnuts. Allow it to cook on a low flame.
  7. Pour in the soaked tamarind water and allow it to cook covered on a low flame for 10 minutes.
  8. Thick brinjal coconut gravy is ready.
