  • Long grain rice – 3cups
  • Beaten rice flakes(Aval) – 1cup
  • Curd(Yoghurt) – 1cup
  • Fenugreek seeds(Uluva) – 1tsp
  • Salt 1/3tsp
  1. Wash and drain the long grain rice, puffed rice and fenugreek seeds.
  2. Soak them in yogurt in such a way that the ingredients get well soaked.
  3. Leave it to soak for 2 hours.
  4. Grind the mixture into paste(consistency equivalent to idly batter).
  5. Add salt to this dough and allow it to ferment overnight.
  6. :- It is ready to use the next morning.
  7. Take a big spoon of the dough and spread it on a frying pan and add oil to make round Uttappam pancakes.
  8. :- Serve Uttappam with coconut chutney or any spicy chutney.
  9. :- For extra taste of Uttappam, one can cut onions, tomatoes and peas and sprinkle on the dough when it is spread on the frying pan.
  10. :- Enjoy the Uttappam pancakes.
