  1. Grind the coriander leaves, green chilies, garlic ginger paste, coriander seeds, cumin seeds and salt to a fine paste.
  2. Heat oil in a pan, add onion and fry the ground masala paste with ½ tsp turmeric powder and a little water.

  5. Cover the pan and cook till the oil separates from the masala.
  6. Add the cubed brinjal, potato and vaal.

  9. Add ½ cup water, cover the pan and cook on a low flame for 15 – 20 minutes till the vegetables are cooked.
  10. Serve with roti.
