  • 10 nos Eggs hard boiled
  • 1/2 cup Carrot grated
  • 2 nos Beans finely chopped
  • 1 no Onion finely chopped
  • 2 nos Tomatoes finely chopped
  • 1/2 cup Mayonnaise
  • 1/2 tsp Pepper powder
  • Oil As reqd
  • Salt As reqd


  • For preparing vegetable stuffed eggs, cut the hard boiled eggs in the centre, remove the yolks and keep it aside in a bowl.
  • Heat oil in a pan and saute the carrot, beans, onions and tomatoes with salt for 5 minutes on medium flame.
  • Mix in the yolks and pepper powder. Remove it from the flame and put it in a bowl.
  • Add in the mayonnaise and mix well.
  • Stuff this mixture into the hard boiled eggs.
  • Vegetable stuffed eggs are ready. Serve immediately for breakfast.
