- Fish fillets - 450 g
- Potatoes(peeled, boiled and smashed) - 2 nos
- Spring onions(finely chopped) - 4 nos
- Green chillies(finely chopped) - 4 nos
- Ginger(finely chopped) - 1 tbsp
- Eggs - 2 nos
- Breadcrumbs(As reqd) -
- Black Pepper Powder(A pinch) -
- Coriander leaves(finely chopped) - 4 springs
- Mint springs(finely chopped) - 1 spring
- Oil(As reqd) -
- Salt(As reqd) -

Instructions
- For preparing west indian fish cutlets, place the fish fillets in a lightly greased steamer and steam gently until cooked. Remove from the steamer and allow it to cool.
- Crumble the steamed fish fillets into a large bowl, using a fork.
- Mix in the mashed potatoes, spring onions, salt, pepper powder, green chillies, ginger, coriander leaves, mint leaves and one egg.
- Shape into cutlet shape and dip the cutlets in the remaining egg.
- Then coat it in breadcrumbs.
- Heat oil in a frying pan and fry the cutlets till it becomes brown on both the sides.
- West indian fish cutlets are ready. Serve hot with ketchup.
