  • For preparing zucchini in spicy tomato sauce, cut the ends from the zucchini and then cut them into 1 cm thin slices. Keep it aside.
  • Heat the oil in a deep frying pan.
  • Add in the onion and garlic. Saute for 5 minutes.
  • Then add turmeric powder, chilly powder, coriander powder, cumin powder and salt. Saute for 2 minutes.
  • Add the sliced zucchini and cook it for 5 minutes.
  • Then add in the tomato puree and chopped tomatoes into the pan. Mix well.
  • Pour water and cover the pan. Allow it to simmer until the sauce thickens.
  • Stir in the coriander leaves and garam masala. Allow it to cook until the zucchini pieces are tender.
  • Zucchini in spicy tomato sauce is ready. Serve as a side dish.
