Brinjal Pahie (Step By Step Photos)

Ingredients
  

  • Brinjals : 150 gm
  • Mustard seeds : a few
  • Curry leaves : 1 leaf
  • Garlic : a few
  • Vinegar : 1tsp
  • Tamarind : a few
  • Onions : ½ of a small onion
  • Cinnamon stick : 1
  • Coriander powder : 1 tsp
  • Dry chilli : a few
  • Sugar : ½ tsp
  • Cumin powder : ¼ tsp
  • Turmeric powder : a pinch
  • Salt : to taste
  • Coconut milk : 1 cup

Instructions
 

  • Slice the brinjals length wise and rub over with turmeric and salt
  • Grind together red chillies, mustard seeds and cinnamon stick.
  • Soak tamarind in water
  • Heat oil. Fry brinjals
  • Boil together fried brinjals, ground spices, vinegar, turmeric, curry leaves, cumin and coriander powder. Add tamarind water also.
  • To this add coconut milk
  • Simmer till brinjals are well cooked
  • Add sugar just before removing from fire
  • Brinjal Pahie is ready
