For preparing Easy Soya Chunks Masala, first soak the soya chunks in hot water for around 30 minutes. or so
Discard water and squeeze the excess water off the soya chunks and keep it aside. You can also cut it into halves.
Thinly slice the onions, tomatoes, ginger and garlic.
Heat oil in a pan and add the onions, ginger, green chillies, garlic and curry leaves.
Saute till the onions turn brown.
Add tomatoes and saute till it blends well.
Add chicken masala powder and mix well.
Stir fry very well for a couple of minutes, till the raw smell leaves.
Add the drained soya chunks and mix well.
Add sufficient water along with salt and mix well.
Add a little chopped coriander leaves (optional).
Simmer till the soya chunks are cooked well and the gravy becomes thick.
Garnish Easy Soya Chunks Masala with coriander leaves.
This is one of the easiest versions to stir up a spicy soya curry with dry masala. An attempt to give a naadan touch to the modern-day cuisine style trend. :) You can also try out variations by throwing in a couple of cooked baby potatoes or other veggies of your choice and making it all the more wholesome.
