Special Vegetable Biriyani

Ingredients
  

  • 2 cup Basmathi rice soaked
  • 3 nos Onion chopped
  • 2 nos Onion sliced
  • 2 nos Tomato chopped
  • 1 cup Carrot chopped
  • 1 cup Beans chopped
  • 1 cup Cauliflower chopped
  • 1 cup Potato chopped
  • 2 cups Bread slices diced
  • 4 nos Green chillies slit
  • 2 tsp Chilly powder
  • 1 tsp Turmeric powder
  • 1 tsp Garam masala
  • 1 tbsp Roasted cumin powder
  • 1 tbsp Biriyani masala
  • Ginger garlic paste - 1 tbsp
  • 1 no Bay leaves Karuga ela
  • 2 nos Cloves Grambu
  • 2 nos Cardamom crushed, Elakka
  • 1 cup Mint leaves
  • 1 cup Coriander leaves
  • Salt As reqd
  • Sunflower oil As reqd
  • Ghee As reqd

Instructions
 

  • For preparing special vegetable biriyani, first boil 4 cups of water.
  • Add cardamom, bay leaves and cloves.
  • Add required salt in it.
  • Mean while, heat ghee in a pan, fry the rice in it and add to the boiling water. Add a tsp of oil into water and cook rice.
  • Heat little ghee and oil in pan. Add onion, ginger-garlic paste and saute.
  • Add green chillies. tomato and saute again. Add all the vegetables and fry for 2 minutes.
  • Add turmeric, garam masala, chilly powder, cumin powder, biriyani masala and salt. Add little water and cook the vegetables.
  • When done, make this a semi masala.
  • Add mint leaves and coriander leaves.
  • Add a layer of rice in a thick bottomed vessel and add the masala. Add rice again and mix well.
  • Now fry sliced onion in oil till brown. Fry bread slices till crispy .
  • Add this to the rice and give a nice mix.
  • Special vegetable biriyani is ready.
