Malabar Style Ghee Rice

Ingredients
  

  • 2 cups Basmathi rice
  • 4 nos Onion sliced
  • 1 no Green chilly chopped
  • 2 nos Cinnamon Karugapatta
  • 4 nos Cloves Grambu
  • 1 no Bay leaves
  • 2 nos Cardamom crushed, Elakka
  • Ginger garlic paste - 1 tbsp
  • 1/2 tsp Cumin seeds Jeerakam
  • Cashew nuts Few
  • Raisins Few
  • Ghee/dalda As reqd
  • 3 cups Water
  • Salt As reqd

Instructions
 

  • For preparing malabar style ghee rice, wash and drain rice.
  • Fry cashew and raisins in ghee.
  • Fry 2 sliced onions in same ghee. When its color changes to brown, drain and keep aside.
  • In another pan, add little ghee, fry cinnamon, cardamom, cloves and cumin seeds.
  • Add onion and fry again. Add ginger-garlic paste and chopped green chilly.
  • Add the rice and fry till the color starts to change.
  • Add salt and water. Cover and cook rice.
  • When done, decorate with fried cashews, raisins and onions.
  • Add coriander or mint leaves on top.
  • Malabar style ghee rice is ready.
