For preparing vegetable adai - Brahmins special, soak boiled rice, channa dal, urad dal and toovar dal in water about 3 hours.
Grind soaked items with green chillies and red chillies.
Fry onion, beans, carrot and potato in coconut oil.
Add the fried vegetables to the ground dal.
Add asafoetida, salt and curry leaves.
Make a thick batter and mix well.
Pour a ladle full of batter (this can vary according the size of adai that you want to make) and spread it evenly in round shape of adai. Add oil around it and allow it to get cooked till it becomes crisp. Turn sides and cook well.
